Vanilla Cupcakes with Lemon Icing.

Vanilla Cupcakes with Lemon Icing!!
Ingredients
1 ½ cups flour
¾ cup sugar
½ cup milk
½ cup oil
1 t vanilla essence
2 tsp Baking powder
½ tsp Salt
2 eggs
Method
Mix everything together and bake for 15 minutes at 180° C.
If using a mini cupcake tray, bake for 8 minutes.
Let them cool in tray for about 5 mins before turning them out.
Lemon icing
1 cup icing
2 tablespoon unsalted butter
2 tablespoon lemon juice (or to taste)
Yellow food colouring
Method
Mix everything together and spread evenly over cupcakes.
Just lovely!! I just made a batch and it's to die for!!!
