Coffee Caramel Tart
This recipe is really easy and faster than it looks.
Base:
4 x eggs
1 cup sugar (I use brown sugar for a caramelly taste)
1.5 cups flour
4 table spoons milk
1 teaspoon coffee powder (the stronger the better)
2 teaspoons baking powder
2 tablespoons baking margerine
4 table spoons water
0.25 teaspoon salt
1 teaspoon vanilla essence
Whisk the sugar and eggs together until lightish yellow in colour
Mix flour, baking powder and salt together
Heat butter, milk, water, vanilla essence and koffie powder together.
Whisk flour mix, egg mix and butter mix together until nice and smooth.
Bake at 180 degrees for about 15 - 25 minutes.
Syrup
3/4 cup sugar
1 teaspoon vanilla essence
2 table spoons coffee powder
4 tablespoons brandy (I use 8 to ten)
1,5 cups water
Heat everything together and boil for about 5 minutes. When the base is ready, prick it with a fork and pour the syrup over while everything is still hot.
Top Base
Whisk 500ml cream until nice and thick
Add a packet of butterscotch instant pudding
Add a can of condensed milk
Mix together
Spread this over the tart once the tart has cooled down. Crush a flake on top.
Variation for brandy: Frangelico, cape velvet, kahlua, mint liquer or a tiny bit of sweet rum
