Landie - nice recipe for cheesecake

You said you were craving something sweet.

The dietician gave me this recipe when I was there this week. Have not tried it but plan to on the weekend:

Cheesecake

1 cup oat bran
1 cup apple sauce
1/2 cup castor sugar
2 tubs fat free smooth cottage cheese
3-5 tablespoons lemon juice
1 tablespoon lemon zest
1 tin condensed milk
2 tsp gelatin
1/4 cup warm water

Make the base: mix the oat bran, apple sauce and castor sugar together well and press down into a medium sized flan dish. Refrigerate for a minimum of one hour.

After 45 minutes, start making the filling: beat together the cottage cheese, lemon juice, zest and condensed milk until smooth and sloppy.

In a separate cup stir the gelatin into the warm water until dissolved and stir well into the filling mixture.

Pour the mixture quickly into the base and return to the fridge for a minimum of 4 hours, but preferably over night.

PLEASE REMEMBER THAT THIS IS A CARBOHYDRATE AND IF YOU DO WANT TO ENJOY A SLICE WITH YOUR AFTERNOON TEA OR AFTER DINNER MAKE SURE YOU CUT YOUR LUNCH TIME CARB OR DINNER CARB INTAKE BY HALF.

IT IS LOW GI AND PERFECTLY FINE TO HAVE.
