My Christmas Turkey

My whole extended family hated Turkey until I made it. my mom being American likes her traditional Turkey at Christmas but it was always so dry. Since I've been making the Christmas Turkey there is nothing left after Christmas Day dinner.

I debone my Turkey and stuff it with the following stuffing:

cooked couscous mixed with fresh basil, parsley, fresh mushrooms, bacon, yellow peppers and feta cheese cut into blocks

Stuff the Turkey till it is almost full and then sew the Turkey closed with a strong black COTTON thread then slow roast it for 3 hours on 150 degrees with tin foil over it so that it doesn't dry out. (The cooked couscous absorbs all the fats and juices from the Turkey but at the same time it keeps it moist from the inside and the tin foil keeps the turkey moist because it keeps the moisture in the roasting tin) just before serving just brown the outside of the Turkey under the grill and then serve with a nice gravy. Yummy.........!!!!!
